Cups cooked wild rice

  1. Cook the wild rice according to the directions on the package. Can be done in advance and refrigerated. Use chicken or turkey stock in place of water.
  2. Cook butter, onions, celery, pimento and wild rice 10 minutes over medium heat
  3. Add mushrooms, poultry seasoning, salt & pepper, cook until mushrooms achieve the proper texture.
Recipe Notes

Wild rice is fairly expensive, but worth it. Growing and harvesting it is a very manual process. Shopping in advance on-line can save you money. So can buying in bulk if you expect to be using a lot of it. Less expensive mixes of rice and wild rice are quite different from pure wild rice.
